A 23 cm diamond rod
The diamond coating bites into the steel more effectively than a conventional steel: it realigns and revives the edge in a few passes, without forcing. A 23 cm rod, long enough for a chef's knife.

The chef's trick for keeping a clean edge between sharpenings. A few strokes along the diamond-coated rod are enough to realign and refresh the edge in seconds – right before you start cooking.
1. Rest the tip of the rod on a stable surface and press down lightly so it cannot slip. 2. Place the heel of the blade at the top of the rod at an angle of around 20° and draw the blade from heel to tip without applying pressure. 3. Repeat 2 to 3 times per side, alternating. 4. Rinse and dry the knife after use.
Wipe the rod with a dry cloth and clean it with a non-abrasive brush. Do not put in the dishwasher.
Knives not included. Measured by hand: slight variations possible.

Honing steel · diamond
The honing steel does not replace the stone: it maintains the edge between two sharpenings. A few passes on the diamond rod, just before cooking, and the blade regains its precision. It is the chefs' ritual, within reach.

Japanese steels are hard: a smooth steel glides over them with no effect. Diamond, on the other hand, grips and maintains the edge of your Damascus blades as well as your Western knives.
A riveted rosewood handle, comfortable in the hand, and a stainless steel guard separating the hand from the rod. The motion is stable and safe, from heel to tip.
Steel resting on the worktop or held in the air: two techniques, an angle of about 20°, from heel to tip, alternating sides. Two to three passes are enough.
